AHAR : Recipe for Baba Ganoush (Arabic Aubergine Dip)

You are what you eat! Hence Yoga emphasises that we eat small meals of fresh, healthy and wholesome food at regular intervals. AHAR or a Yogic diet is one of the pillars of yogic living. Praying before you eat, being thankful and grateful for all the people and circumstances which made it possible for this food on your plate; tends to make the food even more delicious!

I have always known the joys of eating but recently discovered the joys of cooking.. :) I lived in Oman for 2 years and being a vegetarian there were not many arabic food options. Mainly I would end up with salad, pita bread and the dips - humus and baba ganoush.

Here's the recipe for Baba Ganoush (Arabic Aubergine Dip)

INGREDIENTS:

A medium sized purple brinjal/ aubergine/ eggplant
2 spoons of tahini paste
Garlic
Ginger (optional)
Juice of 1 and a half big Limes
Olive oil
Salt to taste.

METHOD:

Wash aubergine, make small cuts in the aubergine and place the garlic cloves into these. Cut the stem. Put the aubergine on a skewer. On a slow gas flame, roast the aubergine till the skin gets brown and the steam comes out of the cuts with garlic inside. Once the insides are cooked. Remove skin and place the flesh and roasted garlic into a bowl. Add 2 tablespoons of tahini. Salt to taste. The tahini requires lemon and olive oil to help it to mix smoothly.

Add a sprig of parsley or mint on top and your dip is ready!

It combines really well with bread or chapati or pita and a salad.

Humus Recipe A chick-pea cream with garlic, Humus, Oumos, or Hummus A delicious and healthy mediteranean recipe, easy, cheap and fast to make (10 min). Humus is a cream of chick peas with garlic, lemon and olive oil, from Lebanon. - Take a can of chickpeas (standard, 850ml 530 g), also called garbanzo beans. Wash the peas (4 holes on one side, open the other, put in a sink and rinse under a water flush) - Put the peas in a blender (food-processor, e.g., Magimix). - Add 100 ml of lemon juice (one glass or half a cup, unsweetened, e.g., Pulco, or two lemons) - Let it turn for a while. When it becomes ?creamy? - Add 100 ml of olive oil (one glass or half a cup. Better to replace ¼ of the glass with canola (rapeseed) oil, for fatty acids balance) - Let it turn until the cream is ?perfect?. While it turns: - prepare four big garlic cloves, - Stop the blender, crunch the garlic with a garlic-cruncher on top of humus, wait 2-3 min for garlic to ?mature?, and mix again the humus (why should you wait? Why should garlic "mature"? see the explanation in the Gaspacho recipe). - Serve it cold, with mint leaves as ornament (optional). Spread it on bread (or take a spoon!) For those who ?hate? garlic (yes, they exist), make humus without garlic, but provide cumin powder with it. For those who like ?hot? stuffs, use an olive oil where red chilli pepper have been ?swimming? for a while. Tahini Some people E-mailed me: "Hummus should contain tahini!" = sesame cream. Well, not easy to find in a supermarket, but Meige brought me a "Tahina" box (Alkanater, Lebanon). I thus tried to make hummus with one, two or four large spoons of tahini. But I did not find it better than without tahini: it makes hummus heavy and sticky, hard to clean and not so tasty. My advice is thus not to use it, but if you like it, use it ...

Is it rude/ wrong to NOT want to share recipes with strangers? (Answers: 11) (Comments: 0)
I like to cook and bake and try out recipes with my own ideas. Sometimes they are successful. Which is great. And I like sharing the food with friends and family. However, my mom always takes them to work for her friend. Which is okay. But her friend keeps asking her for recipes. I don't know this woman and I really don't want to share. After getting an earful from my mom (because her friend asked for the recipes 3 times, and she shouldn't have to ask more than once) I ended up giving her my scones and humus recipes. I wasn't happy, but my mom accused me of being rude, selfish and arrogant for not wanting to share something so simple. To me, it's not something so simple. I worked hard to come up with something good and I don't really want to write it out to the most excruciating detail for a stranger. She also asked my mom to get me to give her my cheesecake recipe. Since I don't have one, I said to look online. And again got an earful for being selfish and rude. Am I supposed to look online and find something for this woman? The reason I am asking all this is because we got into an argument because I jokingly said to my mom that I am not giving her friend my cupcake and brownie recipes. My mom took some brownies and cupcakes that I made for her friend. I made them for my brother every year and they are great. I get compliments from all the kids and teachers. Makes me happy. And I have fun making and decorating them. So am I being selfish or is she being unreasonable? If you think I am being arrogant or trying to show off that I am a good baker... I really am not. I am just really frustrated here. I wanted to know how most people feel about sharing recipes, but really I guess my "creations" are the only thing I have considering my mom leaves me with no privacy. I think she has no right judging me and taking my creative license. As for telling my friends, I have no problem. My biggest pet peeve: people taking credit for something that I have created. (Yes, it happened.) If my friends ever tell me something about a recipe...I remember to give them the credit.

Humus-- recipe/serving ideas? (Answers: 2) (Comments: 0)
I love humus, make a big batch twice a month or so, and will be making it tonight. I was just looking for new ideas. I make my basic with the chick peas, tahini, pine nuts, very little olive oil, water, lemon juice, salt, pepper, & garlic. I will split up the basic recipe and add eggplant, or red roast peppers, or olives, or black beans and curry. I eat it with raw veggies, crackers, pita bread, tortilla chips, or in a wrap with asparugus & peppers (my fave lunch!). I like to smear it on sprouted wheat toast and top it with salad leftovers, like lettuce, cuke, tomato, peppers, etc. and eat it like an open sandwich. Any unusual or exciting way you make humus, or what do you like to pair it with? I'm not a vegetarian so meat is okay too. Some good ideas so far, sounds yum. I'm on my way to the market now, lets see if anyone else chimes in and I might have to make a second trip. Thanks all!
